Rakeback Beef Featured

As a man I have to admit that the taste of a good piece of beef steak really gives me the energy to continue the rest of the week. At the beginning when I started my Chef lessons I really had a complete wrong idea about how beef should be cooked, idea that always was bringing the meat to be well-done or most of the times over-cooked

 

Of course this is a matter of taste, but to be honest a good beef of steak like filet mignon in French filet de bœuf which it is coming from the most tender part of beef although that in French menus sometimes it refers to pork, it is a pity to overcook it.Few simple tricks as also fresh ingredients can really make you an enjoyable meal for you and your love ones.

 

Ingredients

 

300-400gr of a good quality fresh filet mignon

One table spoon of sunflower oil

One table spoon of unsalted butter

Couple of sticks fresh thyme

 

For the potatoes with mayonnaise and chives

 

2-3 medium size potatoes peeled and cut in medium cubes

Fresh green chives

One table spoon of good quality mayonnaise

 

Preparation

 

Oil the beef steak in a ball and make sure that all sides are covered well by the oil then season well with good quality black pepper and sea salt. Turn on the oven to the fan 200 Celsius.

Heat the griller in high temperature and place the steak leave it for 3 minutes one the one side in the meantime put in the butter and the thyme then turn from the other side for another 3 minutes and make sure that all sides are sealed and the nice grilled lines are marked on the steak then put the steak in an oven proof pan and leave for 10 minutes.

 

In the meantime put the diced potatoes in boiling salted water and boil until tender, but not smashed. When done remove from the water put in a bowl and add the mayonnaise and the chopped chives again season with salt and pepper to your taste and mix with a spoon all together for the ingredients to take the taste of each other.

 

Remove the steak from the oven and let it rest for 5 minutes, good steaks really need their time to rest in that way the juices of the cooked beef really combine together bringing the delicious taste out of it.A nice presentation would be to place the steak on wooden round board with the bowl of the potatoes and for those who like spicy dipping nice English mustard will really bring the flavor on!
