Casino Artichokes in herb & lemon dressing

Drain a 14oz(398g) can or jar of good quality artichoke hearts (or ready prepared artichikes from a deli). Toss with 1 minced garlic clove and a squeeze of lemon juice.

Drizzle with extra virgin olive oil and season with salt and pepper to taste. Let infuse for at least 10 minutes

Chop a small handful of chives and italian parsley and stir through the marinated artichokes just before serving.
